About this recipe: Brazilian bolo baeta, or 'milk cake', is gorgeously moist and a unique change from the norm. One of the most popular cakes in northeast Brazil, it's very easy to do as it's whipped up in a blender.


Serves: 10 

  • 1L milk
  • 30g butter, melted
  • 3 eggs
  • 500g plain flour
  • 400 to 600g caster sugar, or to taste
  • 1 lime, zested
  • 1 pinch salt

  1. Preheat oven to 220 C / Gas 7. Grease and flour a 25cm tube cake tin.
  2. Put all ingredients in a blender, then blend till smooth. Pour the mixture into the prepared tin.
  3. Bake in the preheated oven for about 30 minutes, or until the cake is golden brown.
