Pasta bake with spinach and ricotta

    I am using large pasta shells for this pasta with spinach, pancetta, tomato sauce and and ricotta, but other pasta types work as well.

    Serves: 4 

    • 375g pasta shells
    • 70g diced pancetta or lardons
    • 1 garlic clove, minced
    • 150g spinach
    • 1 (250g) tub ricotta
    • 35g Parmesan cheese
    • 2 egg yolks
    • 6 basil leaves, minced
    • 2 tablespoons minced parsley
    • 2 pinches piment d'espelette or cayenne pepper
    • salt and pepper
    • 1 (737g) jar marinara sauce
    • grated mozzarella cheese

    1. Cook the shells according to the package directions. Once cooked, rinse under cold water.
    2. Preheat oven to 200 C / Gas 6. Grease a baking dish.
    3. Meanwhile brown the bacon in a saucepan. Add garlic and fry till fragrant.
    4. Rinse the spinach and add to pan. Heat till wilted and set to one side.
    5. In a bowl add ricotta, parmesan, egg yolks, basil, piment d'espelette and salt. Mix till evenly combined, then add spinach and mix again.
    6. Fill cooked shells with mixture and place in baking dish. Pour over marinara sauce and sprinkle with mozzarella.
    7. Bake in the preheated oven till bubbly, about 40 minutes.
