Bolo de leite condensado (Brazilian condensed milk cake)

    Easy peasy Brazilian cake prepared in a blender. Lovely, slightly richer and creamier version of a light sponge, perfect for enjoying for elevenses or afternoon tea! The tin of sweetened condensed milk is used as a measure for the regular milk, as well.

    Serves: 15 

    • 1 (397g) tin sweetened condensed milk
    • 1 tinful milk
    • 2 eggs
    • 30g unsalted butter
    • 200g caster sugar
    • 250g plain flour
    • 1 tablespoon baking powder
    • 1 pinch salt

    1. Preheat oven to 180 C / Gas 4. Grease and flour a 23cm tube cake tin.
    2. In a blender beat all of the ingredients, starting with the liquids (condensed milk, milk, eggs, butter) then adding the dry ones (sugar, flour, baking powder, salt).
    3. Transfer cake mixture to prepared tin and bake in preheated oven for about 40 minutes, or until golden brown.

    Really easy to make. The previous reviewer thought the original recipe too sweet so I reduced the sugar to 150g. Perfect way to use up the tin of condensed milk that had been loitering in the back of the cupboard. And lovely with home made hedgerow jam on top.  -  17 Mar 2013

    I made this cake with Gluten free flour using GF self raising flour & it worked really well. It was not as crumbly as usual GF cakes can be. It is very sweet as previously noted so if I make it again, I'd reduce sugar to 150g. Also it did need about 60 min rather than 40 mins but I was using quite a deep tin.  -  19 Dec 2015
