Beat eggs with water and season with salt and pepper.
In a frying pan, melt the butter and sauté the onion. Add beaten eggs to the pan, stirring with a fork.
When the eggs start to scramble, add the toasted flour and olives and mix well. Finally, stir in parsley; remove from heat and serve.
