This Brazilian treat is known locally as 'Olho de sogra' which simply translates to 'mother-in-law eyes'! They are traditionally served at weddings and anniversaries. It's a delicious combination of chewy prunes with a sweet coconut filling.

Ingredients

250g caster sugar
150g desiccated coconut
4 egg yolks
1 tablespoon butter
125ml milk
500g prunes, stones removed
Method Prep:25min › Cook:20min › Ready in:45min
Mix sugar, coconut, egg yolks, butter and milk together in a saucepan; cook over low heat, stirring all the time, until the mixture starts to pull away from the sides of the pan.
Remove from heat and pour into a lightly greased dish to allow it to cool slightly. Then, using a teaspoon, fill each prune with the coconut mixture.
