210g bulgur wheat
1/2 tablespoon salt
1 teaspoon ground black pepper
500g quality beef mince, cold
1/2 bunch fresh mint
2 tablespoons olive oil to drizzle

Soak the bulgur in cold water for an hour. Drain well and squeeze with your hands to remove any remaining water.
Mix the bulgur, salt, pepper and meat and transfer to a platter, shaping with wet hands. The shape may be square, round or elongated.
Decorate it with the onion cut into wedges and fresh mint making a decoration. Drizzle with olive oil and serve.
