Pork chops cooked with garlic and served with mushrooms cooked in parsley butter. I also did the same using chicken fillets or you can also use steak and season well with lots of black pepper. Serve with new potatoes, Enjoy!!!
4 tablespoons chopped parsley, plus extra to garnish
freshly ground black pepper
2 tablespoons olive oil
1 garlic clove, crushed
2 pork chops
250g button mushrooms, chopped

Combine the butter with the chopped parsley in a small bowl season with black pepper and set aside.
In a large frying heat the olive oil over a medium heat. Add the garlic and fry for 1 minute. Season the pork and add to the pan. Cook for 3-5 minutes each side until cooked through.
Add 25g of parsley butter to a pan, add the mushrooms and cook for 5 minutes. Season with black pepper.
Add the pork and mushrooms to a warm plate. Top each piece of pork with a bit of parsley butter then garnish with parsley leaves
