Easy mincemeat fruit cake

    2 hours 10 min

This is a really quick and easy fruit cake. If you want it a bit more moist, I'm sure you could add a couple of fluid ounces of brandy, rum or tipple of your choice.

Extremely easy to mix! The only drawback I had was I have a fan oven so instead of cooking it for 1 and 3/4 I cooked it for 1 and a half instead! Taste - extremely crunchy, I wonder what my daughter will think of it!  -  15 Jan 2012
