Three ingredient fruit cake

    This is an easy recipe which only uses 3 ingredients. The fruit cake is a lovely moist and sweet cake. It is ideal for people who have a busy schedule. This cake can also be made with gluten free flour.

    Makes: 1 large fruit cake

    • 320g dried fruit
    • 500ml any flavoured fruit juice
    • 255g self-raising flour

    Prep:10min  ›  Cook:1hr30min  ›  Extra time:6hr soaking  ›  Ready in:7hr40min 

    1. Empty the dried fruit into a bowl and add the fruit juice, leave this to soak over night or a at least for a few hours.
    2. Preheat the oven to 200 C / Gas 6.
    3. Once the fruit has been soaked, add the self-raising flour to the bowl and stir. You can use gluten free flour for people with intolerance. Add the mixture to a cake tin.
    4. Bake for 1hr 30 minutes. Check after an hour as all ovens are different.


    Perfect served warm with cream.

    Easy to make, but to eat was gooey and rubbery. I prefer fruit cake to taste more of cake.  -  03 Jul 2014
