About this recipe:After trying various chocolate mug cake recipes online and all of them coming out either too dry or too rubbery, I played around and found the perfect recipe. If you get this right it will be really moist and delicious! Can serve two but if you're a real chocolate fan, you might just be able to eat it all to yourself!
3 tablespoons golden caster sugar (I used golden caster but any will do)
2 tablespoons cocoa powder
3 tablespoons oil
2 tablespoons golden syrup (or 3 tablespoons milk)

Put the flour, sugar and cocoa powder into a large mug.
Add the egg and mix thoroughly. It's far easier if you get rid of the lumps at this stage!
Add the oil and golden syrup and mix thoroughly. (Note: I only used golden syrup because I had no milk, but I actually thought it tasted better with golden syrup anyway!)
Put the mug in the microwave for 2 minutes. After roughly 1 minute you should see your cake begin to rise above the rim of the mug. Don't panic - it shouldn't overflow if you got the ingredient balance right!
After 2 minutes remove your mug and eat. Best eaten ASAP - it tastes great when it's still warm! Enjoy!
The cooking time may vary depending on the wattage of your microwave. Mine is 800W, so I'd say adjust the cooking time by either + or - 20 seconds for every 200W difference.
This recipe is really tasty & not rubbery or dry like the other microwave cakes I've made! I used golden syrup & it only took 1 min 20 in my 900w microwave. Kids wanted a quick choc cake & loved it :-) - 10 Oct 2014
