Mini pizza in minutes

    Ciabatta topped with tomato and herbs, slices of red onion, cheddar and mozarella cheese and whatever else you fancy.

    Makes: 8 mini pizzas

    • 4 ready baked ciabattas
    • 1/2 red onion
    • 1x400g can chopped tomatoes
    • 1 teaspoon dried mixed herbs
    • 2 tablespoons tomato puree
    • 4ozs /125g cheddar cheese
    • 4ozs /125g mozarella
    • 1 clove garlic

    1. Finely chop onion and garlic. Put in pan;add herbs tomatoes and puree and a pinch of sugar.bring to boil then simmer for 5 mins. Preheat oven 180 degrees c.
    2. Meanwhile slice ciabatta in half. Grate cheeses and mix. Prepare any extra toppings
    3. Place ciabatta on baking tray. Spread generously with tomato sauce, top with cheese and toppings of your choice.
    4. Bake for 5/10 mins or until cheese is bubbling. Serve with baked potato or salad.
