About this recipe: A wonderfully easy Canadian recipe that's good for breakfast, light lunch or a snack. It's a quick scrambled egg and bacon sandwich.

Serves: 1 

  • 1 slice bacon
  • 1 tablespoon butter
  • 1 tablespoon finely chopped onion
  • 2 eggs
  • 2 slices toasted bread

  1. Chop the bacon, put the butter in a pan and add the bacon. Cook until the bacon fat is opaque.
  2. Add the onion to the saucepan and stir together for about 3 - 4 minutes until the onion softens.
  3. Beat the egg a bowl and then add to the saucepan and stir until the egg is scrambled.
  4. Pile on hot buttered toast and place the other toast on top to make a sandwich.
