Christmas brandy butter

    I like to gently fry slices of Christmas pudding in butter, then serve topped with a dollop of this brandy butter - stacks of calories but worth every bite! You can make this a few days in advance and then you'll have it ready to serve with Christmas puddings or mince pies.

    • 125g unsalted butter
    • 120g brown sugar
    • 8 tablespoons good quality brandy

    1. Beat the butter and brown sugar together in a mixing bowl, or with an electric mixer, until light and fluffy. Very gradually add the brandy, a little at a time (or it might curdle), beating well after each addition until it's smooth.
    2. Transfer into a clean glass jar or bowl. Cover tightly and chill until required.
