Cod grilled in foil with onions

    Very easy to prepare and delicious cod grilled in foil with onions. It's seasoned with lemon and parsley, and each fillet is baked in a foil packet.

    Serves: 4 

    • 4 cod fillets
    • 2 tablespoons I Can't Believe it's Not Butter®
    • 4 tablespoons lemon juice
    • 1 tablespoon chopped parsley
    • 1 teaspoon salt
    • 1/4 teaspoon pepper
    • 1/4 teaspoon paprika
    • 1 medium onion, thinly sliced

    1. Cut heavy aluminum foil into 4 large squares. Place one fillet on each piece foil.
    2. Melt butter, then stir in lemon juice, parsley, salt, and pepper. Pour butter mixture over fish, sprinkle with paprika, top with onion.
    3. Fold foil around filet and seal. Grill for 5-7 minutes per side. Fish should flake easily when done.


    You can also bake it - 8 to 9 minutes for a fresh cod and about 25 minutes for frozen fillets. Also if you want to decrease calories and fat you can use a zero calorie butter spray for baking.
