About this recipe:
A delicious stuffing made with mushrooms, onions, celery and fresh herbs binded together with breadcrumbs and beaten egg. Stuff your Christmas turkey with this or make into stuffing balls and bake as a side dish.
225g mushrooms (any kind), halved and thinly sliced
3 tablespoons unsalted butter
2 large firm onions, finely diced
2 sticks celery, diced
1 tablespoon coarse salt
1/2 teaspoon freshly ground pepper
Freshly chopped marjoram, thyme and parsley
3 eggs, beaten

In a large frying pan, cook the diced mushrooms over heat, until most of the water from them has evaporated. Transfer to a bowl.
Melt the butter; add onions and cook until nicely browned. Add celery and cook for a few minutes to soften.
Mix the mushrooms, onions and celery with breadcrumbs. Season with salt, pepper and herbs. Pour in the beaten egg and mix well with a fork.
Transfer into a baking dish or roll in stuffing balls and bake for 25-30 minutes while the turkey is resting. Cover with foil if they start to brown too much.
