Chocolate Christmas pudding

Chocolate Christmas pudding

2 people made this

About this recipe: I wanted to create a light chocolate Christmas pudding with plenty of chocolate chips so the kids would at least try it! No booze in this one and it cooks in a much shorter time but everyone enjoyed it and said it still tasted like Christmas pudding!

Serves: 8

  • 80g dried cranberries
  • 80g sultanas or raisins
  • Grated zest from one orange
  • 3 eggs, beaten
  • 120g soft butter
  • 120g light soft brown sugar
  • Juice from one lemon or orange
  • 175g plain flour
  • 1 teaspoon bicarbonate of soda
  • 1 teaspoon mixed spice
  • 2 tablespoons cocoa powder
  • 80g ground almonds
  • 100g dark chocolate, chopped into pieces

Prep:30min  ›  Cook:2hr  ›  Ready in:2hr30min

  1. Mix the dried cranberries and raisins with the orange zest in a large mixing bowl.
  2. Stir in the soft butter, 3 beaten eggs, brown sugar and orange juice.
  3. Sift the flour, bicarbonate of soda, mixed spice, cocoa and ground almonds into the bowl with the fruit mixture. Stir well to mix but it should still be quite wet. If necessary, you can add some milk to soften the consistency. Finally stir in the chocolate pieces.
  4. Pour the pudding into a lightly greased 3-pint pudding bowl or 2 smaller pudding bowls, leaving some room for the pudding to rise a little. Cover and secure with greaseproof paper or muslin cloth, and tie around the rim with cooking string.
  5. Lower in a pot of boiling water, cover and steam for 2 hours if it's a large pudding, 1 1/2 hours if you've made two smaller puddings. You could also steam in a slow cooker on Low for 8 - 10 hours.

This isn't traditional Christmas pudding with alcohol so best to only make a few days in advance and reheat by gently steaming or microwaving it.
