About this recipe:These make great little decorations for your Christmas cake or cheesecake and are very easy to make. It's safest to use liquid egg whites which you can find in supermarkets since these are pasteurised. If you'd prefer not to use eggs at all, gelatine makes a good alternative. Fresh cranberries which usually show up in the supermarkets closer to Christmas.
2 tablespoons water
1 tablespoon liquid egg whites
300g bag fresh cranberries
225g caster sugar

In a medium bowl, stir together the water and egg white until well blended but not too frothy. Stir in the cranberries to coat them with this mixture.
Scatter the sugar evenly on a baking tray, and roll the cranberries in it until they are coated.
Dry at room temperature for 2 hours. Use to decorate cakes.
