Posh Camembert pie

    Succulent, golden, oozing pie, perfect to serve in small wedges as a sophisticated starter for a dinner party, or as an extravagant supper for a night in.

    Serves: 4 

    • 2 onions, chopped
    • 100g bacon (optional)
    • 200g shortcrust pastry
    • 250g Camembert wheel

    1. Saute onions gently in a mix of oil and water until translucent - don't let brown.
    2. Cook bacon separately until crispy, and set aside on kitchen towel to drain.
    3. Preheat the oven to 180 C / Gas 4.
    4. Roll out pastry in a circle, until 2cm wider all round than the Camembert.
    5. Cut the Camembert in half widthways, so that you have two thin circles of Camembert.
    6. Place one of the Camembert circles in the middle of the pastry.
    7. Cover with the cooked onions, then place the other Camembert circle (rind side down) on top. If using bacon, sprinkle on top.
    8. Pull the pastry up to form the pie sides.
    9. Bake until golden, about 30 minutes. Rest 5 minutes, then serve with a green salad and fresh bread. Enjoy!
