Baked sweet potato and chorizo boats

    Lovely warming supper dish, perfect in autumn and winter served with fresh bread. Alternatively, halve the recipe and serve with a green salad for a filling lunch.

    Serves: 2 

    • 2 large sweet potatoes
    • 50 to 100g chorizo or other spicy sauage
    • 1 small onion, chopped
    • 1/2 teaspoon chilli flakes, or to taste
    • salt and pepper to taste
    • 30g grated cheese

    1. Preheat the oven to 200 C / Gas 6.
    2. Bake potatoes whole until tender to a knife inserted into the middle, about 50 minutes.
    3. Fry sausages and onion, add chilli and seasoning.
    4. Either cut potatoes in half, or cut a large slit in the top of each. Scoop out half of the potato and mash with a fork.
    5. Mix the potato with the other cooked ingredients and put back in skins.
    6. Sprinkle on cheese and return to oven for 10 to 15 minutes until cheese is melted and golden.


    A friend of mine cracks an egg on top instead of cheese!
