Chewy berry and orange cookies

    Healthy, low fat, low sugar, delicious oat and berry cookie. No-one will know they don't contain any sugar!

    Serves: 12 

    • 100g plain flour
    • 85g rolled oats
    • 2 tablespoons sugar substitute sweetener
    • 1 tablespoon baking powder
    • 1/2 teaspoon ground cinnamon
    • 125g low fat spread or margarine
    • 1/2 tablespoon orange zest
    • 2 egg whites
    • 50g fresh or frozen mixed berries

    1. Preheat the oven to 180 C / Gas 4.
    2. Mix flour, oats, sugar substitute, baking powder, cinnamon and orange zest, whilst melting spread or margarine. Pour in melted spread and egg whites and mix well. Stir in berries.
    3. Place spoonfuls of dough onto a baking tray (non-stick, or line with baking paper). Flatten slightly with a spoon.
    4. Bake 10 to 15 minutes until lightly browned. Remove from oven, leave on tray for 1 minute, remove to rack to finish cooling.


    If these aren't sweet enough for you, add 1 tablespoon honey, golden syrup or maple syrup.
