    About this recipe: A delicious homemade salsa poured over cooked chicken wrapped in crispy tortillas and smothered in cheese.

    Ingredients
    Serves: 4 

    • 1 tablespoon olive oil
    • 2 large onions, finely chopped
    • 1 red pepper, finely chopped
    • 1 green pepper, finely chopped
    • 2 cloves of garlic, crushed
    • 2 large cartons passata
    • fresh chilli, chopped (to taste)
    • 6 to 8 tortilla wraps
    • 4 to 6 chicken breasts, cooked
    • 110g strong Cheddar cheese
    • 110g white cheese
    • salt and pepper to taste

    Method

    1. Turn oven on at 180 C Fan / 200 C / Gas 6.
    2. To make salsa put oil in large saucepan and put heat onto medium. Put 1/2 of the onion and all of the peppers into saucepan and stir, turn down heat and simmer till translucent (about 10 minutes).
    3. Add garlic and chilli to the salsa and stir well. Add passata, salt and pepper. Stir well. Bring to boil then turn down to simmer, stir every now and again. Simmer for 40 minutes or so.
    4. Meanwhile cook chicken breast either by boiling or cooking in oven. Chop chicken into bite size pieces and place in centre and full length of tortilla wrap. Roll wrap to make a sausage shape and place in a 3 inch deep oven proof dish. Place dish in oven for about 10 to 15 minutes till tortillas start to brown. Keep your eyes to it as depending on your oven it may be quicker than this.
    5. Once tortillas have started to brown at edges (I like it when they have burnt at edges) remove from oven and spread the salsa over the tortillas, sprinkle with the other finely chopped raw onion and sprinkle the cheese over the whole thing. Put back in the oven till the top is melted and turning golden. Serve.

    Use for leftovers

    Any leftover salsa can be chilled and used as dip for crisps. Also salsa can be frozen.

    Make ahead

    Salsa can be made day before, it tastes better if used the second day.

    Tip

    My family eat two of these wraps as dinner so that is why I put it feeds four. It can feed more if you only give one and make it with chips or salad.

    Hey i liked your recipe since im a fan of wraps.. can i replace passata with tomato puree? i got this homemade recipe of passata from internet. i never used passata ever, so tell me if its authentic.. thanks.. 1 small tin tomato puree mixed with 75% amount of water mixed with 1 tsp dried oregano 1 tsp dried parsley 1/2 tsp garlic salt 1/2 tsp thyme drizzle olive oil mixed together and left to infuse for 1-2 hours and it tasted amazing - 20 Jul 2013

    I loved these as did my hubby,i only used half a chilli as i don't like my food too hot,but it wasn't really that spicy even with just that,so i think i'll add more chilli's next time!The homemade salsa was delicious,its so much nicer than the jars of shop bought salsa! - 25 Sep 2011
