Preheat the oven to 250 C / Gas 9 1/2.
Wash and peel the aubergines leaving an unpeeled strip along one side.
Carefully cut across at 8mm spaces but not all the way through.
Place them in the oven for about 20 minutes.
Put the sliced cheese in the spaces cut across the aubergine.
Gently spoon over the tomato sauce working it in between the slices.
Put them back in the oven for 10 minutes. Serve with torn basil leaves and a little extra cheese.
Parmesan cheese is not truly vegetarian, as it contains animal rennet. To make this dish 100% vegetarian, omit the cheese or find a suitable vegetarian substitute made without animal rennet. In supermarkets look for the 'Parmesan style hard cheeses' which are suitable for vegetarians.
