Coconut and lime rice

    A very subtle coconut and lime rice which is nice served with Thai curry. Jasmine rice is perfect for this dish.

    Serves: 4 

    • 180g Jasmine rice
    • 2 lime leaves, very finely shredded
    • 4 tablespoons coconut milk
    • 1 large knob butter
    • 1 lime leaf, left whole for garnish

    1. Boil the rice until cooked. Drain under cold water until completely cool, and drain well.
    2. In a bowl add the rice, limes leaves and coconut milk. Mix well. Cover and chill until required.
    3. When ready to heat, microwave for 3-4 minutes until piping hot and stir through the butter. Garnish with a lime leaf and serve.


    Microwaving the rice keeps it fluffy.
