Easy salt and pepper chicken pieces

    I came up with this recipe of my own after falling in love with salt and pepper chicken pieces from the local Chinese takeaway. It's now a cheaper option for me to cook it myself...and it's simple! Nice on either a bed of lettuce or served with sweet chilli sauce. And great as a starter of part of a main course with fried rice!

    Serves: 2 

    • 1 large green pepper
    • 1 large onion
    • 2 garlic cloves
    • 2 green or red chillies (or one of each)
    • 3-4 chicken breasts
    • 90g breadcrumbs
    • 3-4 pinches of salt
    • 3-4 pinches of sugar
    • 3 tablespoons sunflower oil (or olive oil for extra flavour)

    1. Begin by slicing the chilli peppers, onion, green pepper and garlic and leave to one side. Cut the chicken breasts into medium bite sized pieces and coat them in the breadcrumbs.
    2. Heat the oil in the frying pan or wok and add the chicken pieces. Leavee to cook for 3-4 minutes on Low-medium heat. Add the sliced onions, peppers and garlic. Continue mixing the ingredients together whilst cooking for a further 2 minutes.
    3. Add the pinches of salt and sugar to the ingredients and leave to cook for a final 5 minutes on very low heat until breadcrumbs are slightly browned. Serve immediately.

    could I use cornflour instead of breadcrumbs?  -  13 Aug 2014


    this was delicious and was very easy to make although I did use eggs and a little milk to dip chicken in before putting in breadcrumbs as it sticks to the mix better  -  12 Sep 2013
