    About this recipe: This is my go-to recipe when I feel like a quick savory treat. They taste best hot out of the oven slathered in butter!

    Ingredients
    Serves: 6 

    • 225g self-raising flour
    • 1 pinch salt
    • 55g butter
    • 25g mature Cheddar cheese, grated
    • 150ml milk

    Method

    1. Preheat the oven to 220 C / Gas 7. Lightly grease a baking sheet.
    2. Mix together the flour and salt and rub in the butter.
    3. Stir in the cheese and then the milk to get a soft dough.
    4. Turn onto a floured work surface and knead very lightly. Pat out to an oval 2cm thick. Cut into 6 - 8 pieces depending on how large you like your scones and place on the baking sheet. If you prefer you can also use a cutter to stamp out rounds.
    5. Brush the tops of the scones with a little milk.
    6. Bake until well risen and golden, 12 to 15 minutes. Cool on a wire rack.

    Tip

    If you don't have any self-raising flour on hand use the same amount of plain flour, add 1/2 teaspoon of baking powder and substitute the pinch of salt for a 1/4 teaspoon.

    made these today, although i did find the milk needs to be slightly less as i ended up with quite a wet dough, so had to add more flour, but i also added some chilli flakes and after cutting and brushing with milk, i put some extra grated cheese on top, very yummy!! thank you. - 11 Feb 2014
