Chorizo and bread egg pie

    Versatile and simple supper dish which is rich and hearty. Diced chorizo, onion and chilli baked with an egg mixture with oregano and garnished with olive oil fried bread wedges. Serve with a dollop of garlic mayonnaise and green salad.

    Serves: 1 

    • olive oil
    • 2 heaped tablespoons diced chorizo
    • 2 heaped tablespoons diced onion
    • 1 pinch chilli flakes
    • seasoning
    • 1 slice bread, crusts removed
    • 1 pinch dried oregano
    • 2 eggs, beaten with a splash milk

    1. Pre-heat the oven to 190 C / Gas 5.
    2. Heat a frying pan with olive oil. Pan fry the chorizo and onion until slightly crispy. Add the chilli flakes and seasoning. Continue to fry for another minute then remove and set aside.
    3. In the same fry pan, heat some more oil and shallow fry the bread until crispy. Remove and drain on absorbent kitchen paper.
    4. Grease a glazed terracotta or any round ovenproof dish. Add the chorizo mix.
    5. Add the oregano and seasoning to the beaten egg and whisk well. Pour over the chorizo mix.
    6. Slice the fried bread in half into 2 triangles. Add the bread to the dish either side.
    7. Bake for 12 minutes or until the eggs are set.
    8. Remove from the oven and serve. (The bread will be very crispy but adds a nice texture - if not garnishing with garlic mayonnaise, do add a little oil as will be too dry without).


    Olives and diced potato are also nice added.
