450g day-old bread, torn into pieces
1 (295g) tin condensed cream of mushroom soup
300ml vegetable stock
2 tablespoons water
1 teaspoon all-purpose seasoning
salt and pepper to taste
8 tablespoons cooked wild rice
4 tablespoons dried cranberries
50g fresh mushrooms
8 tablespoons chopped pecans
4 tablespoons cubed apples

Mix together the bread, cream of mushroom soup, vegetable stock, water, seasoning, salt and pepper. Add any or all of the optional ingredients as desired. It will be sticky. Shape into a loaf and wrap in (nonstick or greased) aluminium foil to bake.
Bake for about an hour at 180 C / Gas 4. You can slice it like a meatloaf and serve.
