Pork and beef USA style meatloaf

    This meatloaf is easy to make and taste great. It slices nicely, too. Lovely with mash potatoes and greens. Give it a go.

    Serves: 5 

    • 680g (1 1/2 lbs) pork mince
    • 680g (1 1/2 lbs) beef mince
    • 1 large onion, finely chopped
    • 115g natural breadcrumbs
    • 1 large egg, lightly beaten
    • 3 tablespoons Jack Daniels® Barbecue Sauce
    • 5 tablespoons tomato ketchup
    • 1/2 teaspoon dried thyme

    1. Preheat the oven to 180 C / Gas 4.
    2. Add the pork mince and beef mince in a very large mixing bowl.
    3. Next add the breadcrumbs, onion, egg, barbecue sauce, dried thyme and salt and pepper to season. Mix everything in the bowl together. If you have a food processor, it makes this easier, but it still taste exactly the same.
    4. You end up with a messy looking mixture in the bowl. Not to worry, because it tastes good.
    5. Take the mixture out and shape it onto a baking sheet with some foil onto it. shape it into a bloomer shape. Squeeze the tomato ketchup over the meat loaf. It will keep it moist. It may sound strange, but you won't taste it at the end result.
    6. Bake in the preheated oven until a knife comes out clean, 2 to 2 1/2 hours.

    Serving suggestion

    Serve with onion gravy, mash, and veg.
