Eggy bread

    Thick cut wholemeal bead fried in a savoury egg and onion mixture. This calls for wholemeal bread, but any bread will do.

    Serves: 1 

    • 1 egg
    • 30ml milk
    • 2 tablespoons finely chopped onion
    • salt and pepper to taste
    • 1 slice of wholemeal bread

    Prep:2min  ›  Cook:3min  ›  Ready in:5min 

    1. Mix egg and milk with the onion add salt and pepper to taste.
    2. Empty mixture on to a shallow plate and turn frying pan on high heat
    3. Place bread in the mixture for twenty seconds and turn over.
    4. Place in frying pan for approximatly 40 seconds then turn over and repeat 40 seconds.
    5. Enjoy!

    Other ideas

    You could boil the fine onion before you add to the egg and milk if you do not like crunchy onion.

    My 2 year old loved this for his lunch today! I used a spring onion instead of regular onion though. Very yummy! :-)  -  21 Apr 2015


    I left out the onion as I was just looking for a recipe for regular eggy bread. The milk and egg mixture was just the right amount so nothing wasted. I mis-read the instructions and didn't cook the bread for long enough - but 40-50 seconds would have been about right. I was out of ketchup, so I served it with salsa which went really well.  -  30 Dec 2012
