About this recipe: Pure comfort food that doesn't cost a fortune! Mince beef, carrots and onions, topped with an extremly cheesey mash. My whole family gobbles this up every time. It's easy to make and leftovers freeze well.


Serves: 6 

  • 4 large potatoes, peeled and cubed
  • 1 tablespoon butter
  • 1/2 onion, finely chopped
  • 30g grated Cheddar cheese
  • salt and pepper to taste
  • 5 carrots, peeled and diced
  • 1 tablespoon vegetable or olive oil
  • 450g lean beef mince
  • 1 tablespoon flour
  • 1 tablespoon tomato ketchup
  • 180ml beef stock
  • Extra grated Cheddar for topping

  1. To make the cheesy mash topping:Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain and mash. Mix in butter, finely chopped onion and grated cheese. Season with salt and pepper to taste; set aside.
  2. Cook carrots in boiling water for 5 minutes, drain and set aside. Preheat oven to 180 C / Gas 4.
  3. Heat oil in a large frying pan. Add onion and cook for 5 minutes or until softened. Add beef mince and cook until well browned. Pour off any excess fat, then stir in flour and cook for 1 minute. Add ketchup and beef stock. Bring to the boil, reduce heat and simmer for 5 minutes.
  4. Spread the mince beef mixture in an even layer on the bottom of a casserole dish. Sprinkle over the cooked carrots. Top with the cheesy mashed potato mixture and sprinkle grated Cheddar cheese over the top.
  5. Bake for 20 minutes, or until golden brown.

Kids loved this. It says in the ingredients half an onion but in fact you need half an onion for the mash and half for the mince. - 26 Feb 2013
