About this recipe: This recipe has been so popular all year round. It's easy and tasty. It's great for lunch boxes, too.

Serves: 8 

  • 8 chicken breast halves, skinned
  • 1 green bell pepper, seeded and cut into 2.5cm chunks
  • 1 red bell pepper, seeded and cut into 2.5cm chunks
  • 1 red onion, cut into 1/4 inch dice
  • 50g pitted black olives
  • 1 tin artichoke hearts
  • 4 leaves fresh basil
  • black pepper to taste
  • 6 tablespoons balsamic vinegar
  • 6 tablespoons olive oil
  • 6 tablespoons corn oil

  1. Place chicken in large pot and barely cover with cold water. Bring water to the boil reduce heat and simmer for 20 minutes. Let chicken cool slightly in liquid.
  2. When chicken can be handled, remove meat from bones and cut into 2.5cm chunks. Place in large serving dish.
  3. Add bell peppers, onions, olives, artichokes, basil and pepper; stir well. Sprinkle over oils and vinegar Chill for at least 30 minutes.
