About this recipe:
This recipe has been so popular all year round. It's easy and tasty. It's great for lunch boxes, too.
8 chicken breast halves, skinned
1 green bell pepper, seeded and cut into 2.5cm chunks
1 red bell pepper, seeded and cut into 2.5cm chunks
1 red onion, cut into 1/4 inch dice
50g pitted black olives
1 tin artichoke hearts
4 leaves fresh basil
black pepper to taste
6 tablespoons balsamic vinegar
6 tablespoons olive oil
6 tablespoons corn oil

- Place chicken in large pot and barely cover with cold water. Bring water to the boil reduce heat and simmer for 20 minutes. Let chicken cool slightly in liquid.
- When chicken can be handled, remove meat from bones and cut into 2.5cm chunks. Place in large serving dish.
- Add bell peppers, onions, olives, artichokes, basil and pepper; stir well. Sprinkle over oils and vinegar Chill for at least 30 minutes.
Great for parties, too!
