First put your water in a large pan, then add salt, pepper, herbs and garlic into the water and stir.
Place your beef into the pan and water, ladle some water over the beef.
Turn your temperature to Gas 1 and put a lid on and leave it to cook for about 4 hours. Every half hour just ladle the water over the meat. It keeps it more moist.
Once cooked, leave it to cool, as it will be easier to slice.
You can even cook this the evening before and leave it to chill overnight.
Use the water and juices from your beef to make a gravy - it tastes delicious.
If you want it rare, just reduce cooking time to your suitability.

Turn this into a slow cooker recipe by simply following the recipe till step 3, then cooking on Low in the slow cooker for 6 to 8 hours.
This is the best.
I did a smaller bit of beef and used more water so I didn't have to top it up. This is the most tender and melt in the mouth thing you have ever eaten. I was a bit worried about not using a stock cube but it wasn't needed. - 08 Sep 2014
