Cheesy cauliflower and potato

    A cheesy side dish of cauliflower and potatoes that will leave you wanting more. It's so easy to make.

    Serves: 8 

    • 1.8kg (4lb) potatoes
    • 300g fresh or frozen cauliflower
    • 400g extra mature Cheddar cheese
    • butter (optional)
    • pinch of salt and pepper

    1. Peel potatoes; place in pan of salted boiling water, leave to cook for 20 minutes or until soft.
    2. Preheat the oven to 180 C / Gas 4.
    3. Wash and cut your cauliflower into chunks, place into boiling water and cook for 10 minutes.
    4. Grate your cheese.
    5. Once potatoes and cauliflower are cooked,drain and mash your potatoes. Add butter if you like.
    6. Place mash in a oven tray and spread it to the edges. Sprinkle half the amount of cheese over the mash.
    7. Place your cauliflower over the mash, then add the rest of the cheese on top. If you require more cheese then go for it!
    8. Bake it in the preheated oven for 20 to 30 minutes and serve.
