3 mangos, peeled and diced
1 cucumber, peeled and diced
2 chilli peppers, seeds removed and finely chopped
1 Spanish onion, finely diced
1 clove garlic, minced
4 tablespoons freshly chopped coriander
1 tablespoon lime juice
salt and pepper to taste

In a large bowl, stir diced mango, cucumber, chilli peppers, onion, garlic and fresh coriander. Season with lime juice, salt and pepper. Refrigerate at least 2 hours before serving to allow the flavours to blend.
