    About this recipe: This recipe makes enough icing to fill a 4 layer cake. Quantities can be easily doubled if you need it to ice 2 trays of buns.

    Ingredients
    Serves: 16 

    • 500g icing sugar
    • 120g unsalted butter
    • 30ml fresh lemon juice
    • 1 teaspoon lemon zest
    • 2 tablespoons milk

    Method

    1. In large bowl, beat icing sugar, unsalted butter, lemon juice and lemon zest together until smooth. Beat in milk, then increase speed and continue to beat until light and fluffy.

    Lovely icing, added yellow food colouring for really lemony colour, unfortunately the cupcakes I made was yuck!😭 but d icing was gorgeous! - 14 Jun 2015
