Lemon buttercream icing

    This recipe makes enough icing to fill a 4 layer cake. Quantities can be easily doubled if you need it to ice 2 trays of buns.

    • 500g icing sugar
    • 120g unsalted butter
    • 30ml fresh lemon juice
    • 1 teaspoon lemon zest
    • 2 tablespoons milk

    1. In large bowl, beat icing sugar, unsalted butter, lemon juice and lemon zest together until smooth. Beat in milk, then increase speed and continue to beat until light and fluffy.

    Most AWESOME lemon icing recipe I have ever tasted! I did leave out the milk b/c I wanted to pipe the icing on a cake. Also added 3 oz. cream cheese. I love that the recipe was by weight - always a better outcome for me b/c ingreds. are more exact.  -  22 Apr 2016
