Cannellini bean and coriander dip

    Serve this delicious, garlicky and herby dip with pitta, tortilla crisps or wheat crackers.

    Serves: 10 

    • 2 (400g) tins cannellini beans, rinsed and drained
    • 1/2 bunch fresh coriander, chopped
    • 3 cloves garlic, crushed
    • 5 tablespoons extra virgin olive oil
    • 1 1/2 lemons, juiced
    • salt and freshly ground black pepper to taste

    1. In a food processor, combine the cannellini beans, coriander, garlic, olive oil and lemon juice. Process until smooth, or to your desired consistency. Taste, and season with salt and pepper.
