Brandy sauce for Christmas pudding

    This is the old-fashioned brandy sauce that I make for our family Christmas. Best to make this right before serving the Christmas pudding but it won't take you long to make.

    Ingredients
    Serves: 4 

    • 150ml milk
    • 1 teaspoon cornflour
    • 1 or 2 teaspoons light brown soft sugar
    • 1 egg yolk
    • 1/2 small wineglass of brandy (about 60 or 80 ml)

    Method

    1. Mix the cornflour and milk together in a bowl. Whisk with a fork to break up any lumps. Pour into a saucepan and heat over gentle heat, stirring until it starts to boil. Add the sugar, stir and remove from the heat.
    2. In a seperate bowl, mix the egg yolk and brandy together. Pour this into the warm sauce, stirring until it thickens. Serve straight away with your steamed Christmas pudding.
