Chicken stuffed with tomato mascarpone

    Chicken breasts stuffed with creamy tomato mascarpone, wrapped in bacon and baked for an easy Italian dish.

    • 2 tablespoons mascarpone cheese
    • 2 tablespoons tomato puree
    • 1 pinch Italian mixed herbs
    • 2 chicken breasts
    • 4 slices unsmoked back bacon

    1. Preheat the oven to 190 C / Gas 5.
    2. In a bowl add the mascarpone, tomato puree, herbs and mix together.
    3. Make a slit in each chicken breast, which should create a little pocket.
    4. Stuff each chicken breast with the tomato mascarpone.
    5. Wrap each chicken breast in 2 slices of bacon. Secure with cocktail sticks. Place into an ovenproof dish.
    6. Bake in the preheated oven until the chicken is no longer pink at the centre, about 30 minutes.
