Pineapple salsa

    Use fresh or tinned pineapple for this easy fruity pineapple salsa. I make it to serve with spicy jerk chicken.

    Ingredients
    Serves: 6 

    • 400g pineapple, finely chopped
    • 1/2 red onion, finely chopped
    • 1 red chilli, finely minced
    • 1 tablespoon honey (optional)
    • 1 lime, juiced
    • fresh coriander leaves, chopped
    • salt, to taste

    1. Mix the chopped pineapple, red onion, diced chilli, honey and lime juice together in a bowl. Chill for 30 minutes or an hour. Stir through freshly chopped coriander leaves and season with salt before serving.
