About this recipe: These savoury biscuits make a perfect party nibble, as they're easy to make and can be done well in advance. Feel free to add some herbs, or a sprinkling of Parmesan before baking!

Makes: 12 biscuits

  • 150g plain flour
  • 50g butter, softened
  • 1 egg
  • 1 pinch of salt
  • 2 slices ham, finely chopped

Prep:15min  ›  Cook:10min  ›  Extra time:1hr chilling  ›  Ready in:1hr25min

  1. Rub the flour, salt and butter together until the mixture forms even crumbs. Add the egg and ham, and combine. Shape the mixture into a ball, wrap in cling film and chill for 1 hour in the fridge.
  2. Preheat the oven to 180 C / Gas 4 and line a baking tray with parchment.
  3. Flour a work surface and roll out the mixture with a rolling pin. Cut into desired shapes. Place the biscuits on the baking tray and bake for 10 to 15 minutes or until golden brown.

You can use any ham you like - including prosciutto or Parma ham. Also, instead of rolling and cutting into shapes, you can shape the mixture into a log before chilling, then simply cut rounds from the log and bake!

Liked the idea, but found them to be rather lacking in taste, need something extra - 17 Dec 2015
