Easy make grand sponge cake

    This is a really nice, easy bake cake for anyone who fancies it! You can make it vanilla, or add cocoa powder for a chocolate cake.

    Serves: 6 

    • 227g (8oz) caster sugar
    • 227g (8oz) butter, preferably Stork®
    • 227g (8oz) self-raising flour
    • 4 medium eggs
    • 2 teaspoons vanilla extract
    • 140g (5oz) cocoa powder (optional)
    • whipped cream, as much as you want (optional)
    • 2 to 4 tablespoons jam (optional)

    1. Preheat the oven to 180 C / Gas 4.
    2. Put the sugar and the butter into a bowl and mix with a wooden spoon or an electronic mixer.
    3. Next add the flour and mix again.
    4. Then crack the eggs into a jug and whisk until orange.
    5. After that keep mixing, adding the egg a bit at a time, then add the cocoa powder, if using. Pour the cake mixture into 2 baking tins or 1 deep baking tin.
    6. Bake in the preheated oven until brown and a skewer inserted near the centre comes out clean, about 20 minutes.
    7. Then take the cake out of the oven, give it 30 to 60 minutes to cool down and add the cream and the jam.

    Freezing tip

    It is freezable.
