About this recipe: A delicious and easy smoked salmon and leek tart, perfect for a light lunch or a dinner party starter.


Serves: 8 

  • 1 tablespoon olive oil
  • 3 large leeks, trimmed and chopped
  • 125g smoked salmon
  • 1 (23cm) pastry case
  • 2 tablespoons chopped fresh dill
  • 200ml milk
  • 225ml double cream
  • 4 eggs

  1. Preheat the oven to 180 C / Gas 4.
  2. Heat the olive oil in a large pan. Saute the leeks until soft, about 8 minutes, stirring occasionally. (Caramelising them a bit is really nice, too!)
  3. Transfer the leeks to the unbaked pastry case, scattering them over the bottom. Sprinkle with dill.
  4. Whisk together the milk, cream and eggs. Pour over the leeks in the pastry case. Carefully transfer to the preheated oven and bake for 35 to 45 minutes, or until set.
  5. Cool slightly before slicing and serving.

great tasting tart. Have made tarts with smoked salmon before, but never with dill, which was a nice addition. The method does not mention salmon, so I placed salmon pieces on the bottom of tart before the leeks and dill, and then poured the cream mixture on top. will definitely make this again. - 13 May 2015
