About this recipe: Tasty, budget friendly meal for the whole family. Sliced potatoes top this savoury casserole of corned beef and baked beans.

  • 1.8kg potatoes, sliced
  • 1 tin corned beef
  • 2 onions
  • 250g mushrooms
  • 1 tin baked beans
  • 1 tin tomato soup
  • 25g cheese, grated

  1. Preheat the oven to 180 C / Gas 4.
  2. Slice and parboil the potatoes until cooked but not breaking apart, drain and let cool while you prepare the filling.
  3. Dice the corned beef, chop the onions and peel and slice the mushrooms.
  4. Fry the corned beef, mushrooms and onions gently until golden - turn the cubes of corned beef carefully to avoid it being mashed up.
  5. Transfer the corned beef, mushrooms and onions to a casserole dish and pour over the baked beans.
  6. Arrange the potatoes over the mix and then pour over the tomato soup. Sprinkle with the grated cheese.
  7. Bake in the preheated oven until bubbly, about 40 minutes.
