Tangerine chicken fillet

    One of my favourite combinations. This recipe is quick and easy but the taste is rich. I served it with mashed potatoes.

    Ingredients
    Serves: 4 

    • 1 (175g) tin unsweetened tangerines
    • 400ml dry Sherry
    • 4 chicken breast fillets
    • salt and pepper
    • olive oil as needed
    • 2 teaspoons cornflour
    • 100ml double cream

    Method

    1. Mash tangerines together with their juice and dry Sherry in a blender.
    2. Season chicken fillets with salt and pepper and fry shortly on a small amount of olive oil on both sides. When done remove it from the pan and keep it warm.
    3. Add cornstarch to remaining oil, stir shortly and pour tangerine mixture on it. Stir good to keep the sauce smooth. Slowly add cooking cream.
    4. Cut chicken fillets into slices about 1cm thick and cover with tangerine sauce.
