About this recipe: This is a posh toastie made with a wholemeal bagel, goat cheese and smoked salmon. Utterly delicious and easy to make!


Serves: 1 

  • 25g soft goat's cheese
  • 1 roasted red pepper, chopped
  • 25g smoked salmon, thinly sliced
  • 3 to 4 leaves fresh basil, chopped
  • salt and pepper to taste
  • splash of milk
  • 1 small tomato
  • 25g smoked Gouda cheese
  • 1 wholemeal bagel

  1. Combine the goat cheese, roasted red pepper, smoked salmon, basil, salt, pepper and splash of milk (about 1 tablespoon). Using a fork, combine these ingredients into a spread. It should combine and be able to form into a ball inside the bowl. If it is not coming together, add a little more milk.
  2. Slice the bagel and toast it lightly under the grill.
  3. Spread the salmon mixture over the lightly toasted bagel halves. Top each half with tomato slices, salt, pepper and Gouda. Place back under the grill till melted and bubbly. Sprinkle a bit more pepper and chopped basil for color and serve.
