Best ever cheese straws

    These cheese straws are nothing but gorgeous. Start with room temperature ingredients for best results. If you don't have a piping bag, use a freezer bag with one of the corners snipped off!

    Serves: 18 

    • 165g butter, at room temperature
    • 280g grated Cheddar cheese, at room temperature
    • 4 tablespoons grated Parmesan cheese
    • 220g plain flour
    • 1 teaspoon salt and pepper to taste
    • 1/4 teaspoon garlic powder
    • 1/2 teaspoon red chilli flakes
    • 1 dash hot sauce
    • chilled water as needed

    1. Preheat the oven to 200 C / Gas 6. Line a baking tray with baking parchment.
    2. Mix together butter, cheeses, flour, salt, garlic powder, chilli flakes and hot sauce just until a smooth dough is formed. Don't over-mix. Add enough ice water, a teaspoon at a time, to make the mixture a good consistency for piping.
    3. Put the mixture in a pastry bag and pipe into straws about 12 to 15cm (5 to 6 in) long. I didn't use a tip and just piped them in a round shape.
    4. Bake for 15 to 20 minutes or until lightly browned. Remove and allow to cool completely.

    Freezing tip

    Can be frozen between greaseproof paper in an airtight container for future events.
