Easy vegetarian gravy

    This is a foolproof and delicious vegetarian gravy recipe. You can use homemade vegetable stock, or shop-bought. If you use stock cubes, taste before adding extra salt and pepper. Enjoy!

    Makes: 1 litre vegetarian gravy

    • 110g margarine
    • 1 large onion, sliced
    • 2 cloves garlic, crushed
    • 60g plain flour
    • 1 to 1.25 litres hot vegetable stock
    • salt and pepper to taste

    1. Melt margarine and add onions. Cook over medium-high heat until onions and margarine are browned. Stir in garlic and cook a few more minutes.
    2. Reduce heat to medium and stir in flour with a fork. Add vegetable stock a ladleful at a time, stirring constantly until desired thickness is reached. Simmer on low 5 minutes, adding salt and pepper.
    3. If you prefer a smooth gravy, pour through a sieve to remove onions. Serve hot or freeze and reheat as required.

    One Sunday after dishing up our roast dinner I realised I didn't have any gravy in the cupboard so found this and wow! I haven't shop bought gravy since! I didn't add garlic as I didn't have any but was still fantastic! My husband had seconds of gravy it was so good!  -  08 Oct 2015
