125g plain chocolate, broken into pieces
125g unsalted butter
4 eggs, room temperature
75g caster sugar
50g self-raising flour
1 tablespoon cocoa, plus extra for dusting

Preheat the oven to 180 C / Gas 4. Lightly butter 6 individual pudding moulds or ramekins.
In a double boiler, melt the chocolate and butter. Stir until thoroughly melted, then take off the heat and set aside.
Beat the eggs with the caster sugar until pale and fluffy. Add a few spoons of the cooled chocolate mixture, and gently fold in. Fold in the remaining chocolate mixture until combined. Sift in the flour and cocoa, then gently fold together once more.
Spoon the mixture evenly into the six moulds. Bake in the preheated oven for 6 to 7 minutes. Run a knife around the edges and turn out onto serving dishes. Garnish with a dusting of additional cocoa powder and a dollop of whipped cream.

Love, Love, Love! this chocolate Lava cake. Quick and easy to make. Only makes 4 in my ramekins and have to cook for 91/2 mins. Already made this 3 times. My chocolate monster daughter is in heaven!
Followed suggestion to cool before cooking. Just left in fridge for between 20mins- 24hrs. Pop in oven 10mins before serving. - 15 Nov 2012
