Chocolate Victoria sandwich

    This easy recipe makes two chocolate sponge cakes for a chocolaty twist on the classic Victoria sandwich. Fill with cream and jam, or fresh strawberries.

    • 170g caster sugar
    • 170g margarine
    • 140g self raising flour
    • 30g cocoa powder
    • 3 eggs, beaten
    • 1 drop vanilla extract
    • 2 dessertspoons warm water

    1. Preheat the oven to 180 C / Gas 4. Grease and flour two sandwich tins.
    2. With a wooden spoon, mix together the caster sugar and softened margarine until smooth and creamy. Add vanilla, and stir to combine.
    3. Sift together the flour and cocoa, then add alternately to the margarine mixture with the beaten eggs, stirring between each addition. Gently stir in 2 dessertspoons of warm water.
    4. Divide the cake mixture evenly between the two prepared tins, and bake in the preheated oven for 20 minutes, or until the cakes test done.
    5. Allow to cool in the tins until cool enough to handle, then tip out onto a wire rack to cool completely.
