About this recipe: A classic ready in mere minutes. This is a lovely, comforting sponge, perfect on a cold winter's night with custard.

Serves: 4 

  • 60g plain flour
  • 2 tablespoons golden syrup
  • 2 1/2 teaspoons baking powder
  • 2 large eggs
  • 100g caster sugar
  • 110g softened butter or margarine

Prep:10min  ›  Cook:6min  ›  Extra time:5min resting  ›  Ready in:21min 

  1. Butter a 1 litre microwave-safe mixing bowl. Add golden syrup to the bottom.
  2. Place remaining ingredients in another bowl, and beat well for 2 to 3 minutes. Spoon the mixture over the golden syrup in the buttered bowl.
  3. Cover loosely with cling film and cook in high for 5-6 minutes. Remove and let stand covered for 5 minutes.
  4. Turn out onto a warmed plate and serve with hot custard or extra syrup.
